Gluten-Free Diets high in Heavy Metals

An important statistic that they failed to mention is how many of the other 7398 people who did not self report as gluten-free also had elevated levels of arsenic, mercury, cadmium, and dimethylarsinic acid.

I'm sure the original research paper did include that information, but it's poor science writing on PBS/NOVA's part. I'm surprised. The article they got it from on Ars Technica at least included the following:
"Compared with those who ate gluten, the gluten-free participants had nearly double the total amount of arsenic compounds in their urine. Their blood had around 60 percent more total mercury compounds."

There are a lot of people in the world who eat little-to-no gluten and lots of rice just as a matter of course. It would be interesting to know about the heavy metal elements in their systems as a baseline.

Yes, that's another good data point. Without decent context, it's a bit like saying, "Every single known redhead has a .2% concentration of the toxic chemical chlorine in their tissues!" Which is perfectly normal.

I immediately thought of the typical Japanese diet of rice, fish, and cigarettes. Wonder how it compares.

Seems like the heavy metal contaminants they'd get from the fish and cigarettes would skew their results.
