I've been watching more and more of this guy, finally subscribed. He's got some cool projects. I really need to start working with the esp32s, I've got a couple of them lying around....

Nice. I recently made a 78x11 matrix board with an ESP8266 and WS2812Bs. The ESP32 is really nice, and I use a few for other projects, but the ESP8266 is also pretty sweet if you don't need dual cores, bluetooth, or more than one analog channel - quite a bit cheaper, also. The full 12E dev boards go for $3 to $4 on Amazon. I've got a ton of them around the house for controlling things, monitoring equipment (pool pump, sump pump, temperature, water level, thermostat comms monitor, etc). With wifi they can all intercommunicate, log to a MySQL database, etc. The ESP micros are really amazing little powerhouses for an absurdly cheap price.
