Making Sake: Day one, Evening, Moto.
Add yeast and koji to moto water.
Wash 8 cups of rice until water is clear.
Let rice soak 1 hour.
Let rice drain 1 hour.
Steam rice for 30 min.
Put steamed rice into sterilized container.
Add 2.5 cup refrigerated moto water to hot rice to cool down.
Add rest of moto water (with yeast and koji) to container.
Store between 72f-60f for six days. Stir twice daily.
