Recently I've been eating black bean pupusas as a staple of my diet. Super easy to make, super cheap, and they provide all the body's necessary amino acids.
dough: 3 cups masa flour 2.5 cups water 1 teaspoon salt 1 tablespoon olive oil filling: black beans onion cumin I make the beans semi-refried, first cooking the onions in a pan with a little olive oil until soft. Then add the beans and cumin and a little water. Simmer for about 10 minutes. Squish about 1/4 of the beans with a fork and mix, then simmer another five minutes or so, or until you reach the consistency you like. I go for lumpy peanut butter. It makes it easier to fill the dough. I haven't gotten good at the "make a little cup and pinch it off" method of stuffing the pupusas, so I just make pairs of 1/8" disks, about five or six inches in diameter, plop a good sized dollop of beans in the middle of one, then crimp the edges together. Fry in a dry, medium hot cast iron skillet for 3-4 minutes on a side. I make up a big bowl of masa dough on the weekend and keep it in the fridge and usually cook pupusas fresh, but they reheat fine, and are even good cold. |

This was way more informative than I was expecting.
Also, everyone should try a traditional injera dish sometime. The little holes or divots in the pancake make them extra absorbent and oh so delicious. At the end of the day, sure, it's just a bunch of random shit on a pancake that you eat with your fingers, but the dining experience is a blast and the flavors are so much different than typical western dishes. |
